La Petite Maison's Bikini – A Recipe

We present a simplified take on a drink from a new menu. This is a large-volume pre-mixed that is bursting with the essence of the festive period, making it ideal for your holiday party. Reserve the remaining citrus syrup you can use for brunch beverages, puddings, or for additional servings of the drink.

Bikini Recipe

Serves 10 guests

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Combine all the ingredients into a pot, bring to a simmer, mixing so the sugar melts. Then, take off the burner and leave to cool completely. Pour to a sterilised bottle, cap it keeping it in the refrigerator, where it will keep for up to one month.

To make Batch Mix: Pour every liquid ingredients in a big jug, allow it to infuse for an hour, then strain best through cheesecloth, so it's perfectly clear.

To serve: Measure 85ml from the cocktail base into your stirring glass packed with ice, and agitate carefully for one minute until cold. Strain into a frosted cocktail glass or similar, garnish with the cranberries and finish by giving it a light spray of the essential oil over the top.
